Mushroom Bacon Risotto

A perfect hearty meal for it’s rich, filling and creamy flavour. The combination of earthy mushrooms and smoky Primo diced bacon creates a dish that warms you up from the inside out.

Ingredients
  • 1 cup (200 g) Arborio rice
  • 4 cups (960 ml) chicken or vegetable broth
  • 1 cup (100 g) mushrooms, sliced
  • 1 cup (150 g) Primo Shortcut Bacon, diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup (120 ml) dry white wine
  • ½ cup (50 g) grated Parmesan cheese
  • 2 tbsp (30 g) butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)
Method
  1. Step 1: Cook the Bacon. Where Companies Connect In a large pan, cook the Primo diced bacon over medium heat until crispy. Remove bacon and set aside, leaving the rich bacon juices in the pan for added flavour. Tip: Bacon can be cooked ahead and held warm in a low oven for service.
  2. Step 2: Sauté Aromatics Add the chopped onion and minced garlic to the pan and sauté until translucent, about 5 minutes.
  3. Step 3: Cook the Mushrooms Add the sliced mushrooms and cook until they are tender and browned, releasing their natural juices. Avoid overcrowding the pan to achieve a nice golden colour.
  4. Step 4: Toast the Rice Stir in the Arborio rice and cook for 1–2 minutes until the grains are lightly toasted. This step helps develop flavor and improves textur
  5. Step 5: Deglaze and Simmer Pour in the white wine and stir until absorbed. Turn heat to low, gradually add the broth, one cup at a time, stirring continuously until the liquid is absorbed before adding more. Continue this process until the rice is creamy and cooked through (about 20–25 minutes).
  6. Step 6: Finish and Serve Stir in the cooked bacon, butter, and Parmesan cheese. Season with salt and pepper to taste. Spoon the risotto into warm bowls. Garnish with fresh parsley and extra Parmesan cheese if desired. Serve hot.
